How to make a No Churn Strawberry Shortcake Icecream?

Bake the Shortcake — Combine and whisk all the ingredients listed under “CAKE” until it forms a smooth batter. Pour the batter into a greased loaf pan and bake in a preheated oven at @325 degrees F for 45-50 minutes. Set it aside to cool completely.

Macerate the Strawberry for the Sauce — Combine the strawberries and sugar in a pan for 20-30 minutes. The macerating process will start right away, and you will see the syrup starting to form. Now, bring it to a boil until the mixture thickens. Take it off the flame and allow it to cool completely. Transfer this mixture into a blender or food processor and blend them until smooth and creamy. 

Assemble Ice Cream — Slice the cooled cake into small cubes. Form the ice cream base by combining whipped cream, milk powder, condensed milk, and strawberry extract. Mix until everything is well blended and smooth. Stir in strawberry bits, strawberry sauce, and shortcake cubes, and fold in the ingredients. 

Freeze the strawberry ice cream — Now pour the no-churn strawberry shortcake ice cream into a freezer-safe container, and freeze the ice cream for at least 6 hours or overnight. Once frozen, serve the scoops with a swirl of strawberry syrup.

Recipe Tips and Variations

Maceration is important — Macerate is just like marinating the fruit. It means to sweeten the seasonal fruits that aren’t as sweet as the ripped ones. To enhance the strawberries, I have used sugar. The sugar draws out the natural juices from the strawberries forming a thick syrup. This maceration process will take somewhere between 15-20 minutes. The longer you macerate, the softer the fruit will be, and you will end up with more syrup.

Can use the store-bought shortcake — For this recipe, you may use the store-bought shortcake to save on time and some effort. It makes the equally delicious no-churn Strawberry Shortcake Ice Cream.

Strawberry pieces may turn into icy chunks — Fresh fruits contain high water content. So, the fresh strawberry pieces used in this recipe may turn icy chunks when frozen. You can simply avoid adding fresh fruits if you are not an admirer of the frozen chunks.

To scoop out easily — For an easy scoop, you may run your metal ice cream scoop under hot water just before scooping. It will create magical scoops that are oh-so inviting!

Avoid freezer burn, cover adequately — The container needs to be covered properly so that there is no formation of crystals on the top of the ice cream. For this, cover it tightly with plastic wrap, followed by an aluminum foil.

A perfect make-ahead dessert recipe — This Strawberry Shortcake Ice cream recipe is a perfect make-ahead recipe and can be prepared in advance and used when required later.

INGREDIENTS

  • 1 lb Fresh or frozen Strawberries
  • tablespoons Sugar
  • ¼ cup Water
  • A pinch of Salt

  • Begin by baking the cake. Combine and whisk all the ingredients listed under "SHORTCAKE" until it forms a smooth batter. Pour the batter in a greased loaf pan and bake in a preheated oven @325 degree F and for 45-50 minutes. Set it aside to cool completely.

MACERATE STRAWBERRIES

  • Combine the cleaned, hulled strawberries and sugar in a pan.

  • Cover and let it rest for 20-30 minutes in the refrigerator.
  • After the resting time is over, bring this mixture to a boil. Boil for 20 minutes. The strawberry mixture will start to thicken.
  • Allow it to cool completely. Transfer this mixture into a blender or food processor and blend them until smooth and creamy. The sauce will thicken as it cools.

ASSEMBLE THE ICE CREAM

  • After the shortcake has cooled, slice it into small cubes.
  • Form the ice cream base by combining whipped cream, milk powder, and condensed milk.
    For 3 cups of whipped cream, combine 1½ cups of heavy whipping cream, ½ tsp cream of tartar, and vanilla extract to the bowl of your stand mixer. Start whisking the cream until soft peaks form.
  • Add strawberry extract.
  • Mix until everything is well blended and smooth.
  • Stir in chopped strawberry bits
  • Add strawberry sauce, cooled shortcake cubes, and fold in the ingredients. Finish it with a generous swirl of strawberry sauce. 
  • Now pour the no-churn strawberry shortcake ice cream into a freezer-safe container, preferably with a lid, as you will need to close it tight. Freeze the ice cream for at least 6 hours or overnight. Before serving, let the strawberry shortcake ice cream sit for about 5 -10 minutes on the counter before scooping it into bowls and serving.
