TO MAKE A SANDWICH

  • Start by toasting some bread. Cut the bread in half, and toast in a skillet until lightly browned.
  • Combine chopped onions, tomatoes, corn kernels, chopped avocado, and the seasonings in a large mixing bowl. Give it a gentle toss and set aside.
  • Spread a generous amount of vegan mayo on the toasted slice.
