It’s the perfect drink to quench the thirst on a hot sunny day. This chilled cooler is unbelievably rich, creamy, and no one can guess it’s vegan, dairy-free and kid-friendly too!

How’s the weather at your place? It’s pretty hot, here. Summer has arrived bringing the warm weather with it! The temperature here reached a sweltering 30 degrees C, and it’s incredibly humid. Hence, staying hydrated at all times is extremely important!

I make sure my family eats healthy at all times, but once in a while, a little indulgence is just fine. Occasionally, we can overlook the calorie count and enjoy the simple pleasures and cravings of life, like chocolate.

So, to beat this heatwave and to stay hydrated, I have just THE perfect recipe for my chocolate loving family – a chilled dark chocolate coconut cooler! This drink will serve two purposes: satisfy their sweet cravings and finish off the leftover chocolate ice-cream in the freezer. ??

Ingredients required for Chocolate Coconut Cooler!

  • Coconut milk: use canned coconut milk. The canned coconut milk will add a rich and creamy texture to this drink.
  • Vegan Chocolate Ice cream: I have used a Dairy-Free Dark Chocolate ice cream for this recipe. But feel free experiment with your favorite vegan/non-vegan ice cream.
  • Unsweetened desiccated coconut: adds a sweet, nutty flavor and nutrition (protein, manganese, and fiber) to this drink.
  • Coconut Extract: provides a sweet tropical coconut flavor. Just a teaspoon of coconut extract will take this drink to a whole new level.
  • Melted Chocolate: It gives a more in-depth and vibrant brown color.

Overall, this cooler is a perfect blend of chocolate flavor with a hint of nutty taste from coconut milk and just the perfect amount of sweetness from chocolate ice cream. Of course, you could always experiment and add more or less as per your taste.

How to make a Dark Chocolate Coconut Cooler?

Have you ever tried a chilled cooler before? If not, you are seriously missing out on a lot of deliciousness. You only need five ingredients and 10 minutes of your time to prepare this thirst-quenching cooler that tastes just like a dessert.

  • Start by adding coconut milk, unsweetened desiccated coconut, and coconut extract to a blender. Blend until smooth.
  • Add rest of the ingredients (chocolate ice cream and melted chocolate). Blend until thick and smooth.
  • Once everything is well blended, pour in tall glasses, and garnish the way you like.
  • And then cool off this summer with a chilled glass full of this heavenly chocolatey cooler – trust me; you’ll be coming back for seconds before you know it… It’s highly addicting!

Tips and Variations for this Dark Chocolate Coconut Cooler!

  • Non-vegans can use regular chocolate ice cream and regular milk for this recipe. But don’t skip the desiccated coconut and coconut extract. As these two ingredients – give this cooler its real taste.
  • If swapping with regular milk, add a frozen banana for thickness.
  • Feel free to substitute Chocolate ice cream with thick yogurt or flavored coconut yogurt. If using yogurt, you may want to add some sugar/honey for sweetness and double up on melted chocolate for a deep rich brown color.
  • Since this cooler is thick, try making a chocolate cooler bowl for breakfast. Top it up with some granola, fruits, and toasted coconut. Grab some spoons and dig right in!
  • This chilled cooler is moderately sweet as I opted to cut- out on added sugar and went with the sugar that was present in chocolate ice cream. If you prefer, add some sugar/honey to your drink.
  • Want to make this drink more nutritious? Try to load it up with healthy ingredients like flax seeds or chia seeds.

  • Start by adding coconut milk, unsweetened desiccated coconut, and coconut extract to a blender. 
  • Blend until smooth.
  • Add rest of the ingredients (dairy-free chocolate ice cream and melted chocolate).  Blend until thick and smooth. 
  • Based on the thickness you prefer in your cooler, you can play with the amount of ice cream. I like it thick, therefore, have added 1.25 cups of ice cream. Feel free to add three tablespoons to 1/4 cup of dairy-free milk to dilute the cooler. 
  • Once everything is well blended, pour in tall glasses, and garnish the way you like. 
  • I have garnished the cooler with whipped cream topping and chocolate drizzle. Finally, I finished it off with some toasted coconut flakes and fresh mint leaves. 
  • Enjoy a chilled cooler on a hot sunny day!
