How to make Cheesy Corn Masala Toast

Toast the bread — Brush both sides of the sourdough with garlic butter and arrange them in an airfryer. Place the slices in the airfryer and bake them for 2-3 minutes (on each side) @350°F until lightly brown.

Prepare Corn mix — Add oil and chopped onions to a pan. Sauté the onions over medium heat until soft. Remove them from the pan and set them aside to cool. Now combine corn, bell peppers, cilantro, lemon juice, spices, and cooled sautéed onions in a large mixing bowl. Mix to combine.

Finally, add the cheese blend and mix until all the ingredients are well blended.

Top each layered toast with sliced green chilies and more cilantro leaves.

  • Arrange the buttered sourdough bread on a parchment paper layered or greased baking tray.
  • Bake the bread for 4-5 minutes (on each side) @350°F until lightly brown. Remove and set them aside.
  • Now layer each slice with corn masala, cover with foil and bake them @325°F for 1-2 minutes or until the cheese melts to bubbly, gooey perfection. Serve warm.

  • Arrange the buttered sourdough bread in a heavy-bottomed wide pan.
  • Toast the bread for 4-5 minutes (on each side) until lightly brown and crispy. Remove and set them aside.

INGREDIENTS 

CORN MIXTURE

  • teaspoon Oil
  • 3 tablespoons Onion finely chopped
  • ½ cup Red Bell pepper finely chopped
  • ½ cup Yellow bell pepper finely chopped
  • 1 cup Corn
  • 1 teaspoon Lemon Juice
  • 3 tablespoons Cilantro leaves chopped
  • 1 cup Shredded Mexican Cheese
  • 1 cup Low fat Shredded Mozzarella cheese
  • 1 sliced Green chili or Serrano pepper

SPICES

  • ½ teaspoon Chili Red flakes
  • ¼ teaspoon Black pepper
  • ½ teaspoon Chaat Masala
  • ¼ teaspoon Cumin powder
  • Salt to taste
  • 6 slices Sourdough bread
  • 1 tablespoon Butter to spread on bread

INSTRUCTIONS

ASSEMBLE CORN MIXTURE

  • Add oil and chopped onions to a pan.

    Hey Ruchi – What a recipe,made it today and it’s a 15 minute recipe not 19 minutes. Just kidding it was good. I substituted balck beans with frozen blck eyed peas and added some capsicum. They were good. Thanks.

    if u love mayonnaise, add it to your mix with fresh crushed black peppercorns, so delicious! such a refreshing easy dish, i dont saute the onions beforehand as well, adds crunch!
