Avocados — This fruit is a powerhouse of vitamins, minerals, antioxidants, and fiber. Besides adding richness to the recipe, it also makes it nutritious and flavor-packed. 

Corn kernels — The crunchy corn makes the recipe more exciting and delectable. You can use fresh corn kernels or substitute them with frozen or canned ones.

Black Beans — Adding black beans ensure more nutrition to the recipe. You can use fresh or canned black beans according to availability.

Wonton wrappers for the cups — Wonton wrappers work best for this recipe, though other options are available if you can’t find them in your local store. You can use egg roll wrappers instead of wonton wrappers- just cut them in halves or quarters, as they are much larger. Phyllo sheets also make an ideal substitute for Wonton wrappers if you prefer them. 

Do not let the wonton wrappers dry out Wonton wrappers tend to lose their moisture and dry out when exposed to air for a long time; therefore, always keep them covered with a lightly damp paper towel. 

Storing leftover wrappers — If you are left with some Wonton wrappers, store them in a freezer-safe bag, wrapped with a cling/ plastic sheet. It will prevent the sheets from drying out when stored.

Prepare the muffin pan for baking — The wonton wrappers may stick to the muffin pan or the baking mold. Spraying or brushing the pan or baking mold with oil or butter will prevent the wonton cups from sticking to them.

Caution when baking the Wonton wrapper Wonton wrapper bakes pretty quickly, making it necessary to keep a watchful eye to prevent burning. They bake perfectly light golden in less than 10 minutes at 350° F. Avoid over-baking as they may get burnt. 

Cool the wrappers — Before filling them with the toppings, ensure they are completely cooled. Warm wontons will not make crispy cups and will compromise the delectability of the recipe.

To make bite-sized wonton cups — Wonton cups take shape and size of the mold or pan used for baking them. For bite-sized wonton cups, you can use a mini-muffin pan. However, take note here that you will only be able to fill these mini wonton cups with a few toppings as they may start to spill because of their little capacity to hold. 

Choosing the right avocados — Dark green colored Avocados with some wrinkles are best for this recipe as they are perfectly ripe. The dense and deep wrinkles mean the fruit is overripe and must be avoided. Another way to confirm the ripeness of the fruit is to press the fruit gently. If a small dent forms on pressing, the avocado is ideally ripe. A significant dent shows that the fruit is overly ripe. 

Preventing the avocados from turning brown — Working with avocados can be tricky as discoloration starts as soon as they are exposed to the air. To prevent the avocados from turning brown, you can use lime. You can cut the avocados into pieces and rub lime juice all over them to avoid the discoloration of the fruit.  

Keep the avocados fresh and green for longer — To keep the avocado and corn mix fresh until it is ready to be filled, sprinkle some lime juice all over the prepared mixture. Now cover it with saran wrap. Press the wrap directly onto the prepared mix. The wrap will prevent the air from coming in contact with the avocado surface and turn it brown. Therefore, the mixture can be preserved well, and the fruit can be kept fresh and green even if there is a delay in the filling process.

Adding the delightful zing — Jalapeño peppers add spiciness, while chipotle chili powder adds a smoky flavor to the recipe. 

Serve immediately — Any delay in serving may give time for the avocado to turn brown. However, please keep in mind that slight discoloration is normal. It doesn’t mean in any way that the fruit is spoiled. It happens because the avocado is exposed to the air.

INGREDIENTS 

  • 8-10 Wonton Wrappers
  • 2 medium Avocados riped
  • cup Corn Kernels drained and rinsed
  • ¼ cup Black beans or any other beans – read tips above
  • 3 tablespoons Red Bell pepper diced
  • 2 Green Onions diced
  • 1 Jalapeño remove seeds and dice
  • 2 tablespoons Chopped cilantro leaves
  • 2 tablespoons Lime juice
  • 1 teaspoon Cumin powder
  • 1 teaspoon Black pepper
  • Salt to taste

INSTRUCTIONS

BAKE WONTON CUPS

  • Spray or brush the taco mold tin with cooking spray. This will help the wonton wrapper to stick to the mold and for easy removal after baking.
  • Place the wonton cup in the mold and tuck it to the bottom, and each groove and corner of the muffin tin.
  • Brush it again gently.
  • Place them in the airfryer.
  • Bake the wontons for 8 minutes at 325ºF, until golden and crispy, with little bubbles on them.
    Tip — Keep a watchful eye around 6-7 minutes, as every airfryer is different, and baking times may vary.

  • Let them cool for a second in their mold. Now, turn them onto a wire cooling rack to let them cool completely. Repeat the process with the remaining wonton wrappers.
  • You can even bake them in the oven. Spray each muffin pan with oil, arrange the wonton cups in each cavity, and bake at 350ºF for 7-8 minutes or until golden.
  • Let them cool for a second in their mold. Turn them onto a wire cooling rack to let them cool completely.

PREPARE AVOCADO AND CORN MIX

  • Halve the avocado vertically.
  • Discard the pit and remove the avocado from its peel.
  • Scoop both sides of the avocado flesh into a small bowl.
  • Mash the avocado lightly with a fork.
  • Mash until it reaches the desired consistency and texture you like.
  • Mix in all of your favorite veggies along with the spices.
  • Avocado oxidizes (turns brown) quickly, so mix in the lemon juice immediately.
    Tip — You can even add lemon juice as you mash to avoid oxidization.
  • Mix until all the ingredients are well blended.
  • Assemble: your wonton cups.
  • Scoop a tablespoon full of avocado mix into the baked wonton cups, garnish with your favorite veggies, arrange them on a platter, and serve.
  • Serve them immediately.
