PREPARING TOFU

  • Remove tofu from its box. Wrap the block of tofu between layers of paper towels.
  • Press down on the tofu block with a heavyweight to extract excess moisture. This constant weight for about 30- 35 minutes extracts water entirely from the tofu, making it perfect for the recipe.

  • Slice the block of tofu into 1/2-inch cubes.

  • Transfer the tofu cubes to a large bowl or plate.

  • Sprinkle cornstarch and toss to combine.

  • Spray the air fryer basket with cooking oil to prevent sticking. For easy circulation and crispiness, arrange the tofu cubes in a single layer inside the basket. Do not overcrowd the basket.

  • Cook tofu cubes at 375°F for 12-15 minutes or until crisp and slightly browned. Make sure to turn the tofu bites halfway during the cooking time so that all the sides are golden brown.

PREPARING THE SAUCE

  • While the tofu is baking, let's prepare the sauce. Combine coconut sugar and maple syrup in a mixing bowl. Stir until the sugar is completely dissolved.

  • Finally, add sriracha.

  • Heat oil in a skillet and add minced garlic to it.

  • Add the chili sauce mixture to the skillet and start heating over medium-low heat, stirring frequently.

PAN-FRY TOFU CUBES

  • Combine tofu cubes and cornstarch in a bag. Seal the bag and gently massage the tofu cubes to coat in cornstarch.
  • Heat oil in a pan and add the cornstarch-coated tofu cubes to it. Cook over medium-low heat for 8-12 minutes, turning occasionally.
  • Pan-fry the tofu in vegetable oil until golden and crispy.
