Corn — I have used fresh corn from the cob because it really makes a huge difference in flavor. However, feel free to use whatever you have on hand, whether it’s canned or frozen corn. If you’re using canned corn, be sure to rinse and drain it completely.

Bell peppers — I have added red bell peppers to my Spicy Masala Corn Chaat recipe not only for their vibrant color but also for their satisfying crunch, which enhances the overall texture. Additionally, yellow bell peppers can be a great alternative, as they provide a similar crispness and a slightly sweeter flavor that complements the other ingredients beautifully.

Tomatoes — Fresh, juicy tomatoes make this recipe stand out with their great flavor and bright color. First, scoop out the juicy pulp. Then, chop only the outer skin. This way, the pulp’s juices won’t make the chaat soggy.

Papdi — These crispy, round flour crackers are deep-fried and lightly spiced. They are typically used in chaat dishes like papdi chaat, dahi bhalla, and bhel puri. You can either make them from scratch or buy them ready-made.

To eliminate the rawness of veggies — I have sautéed onions, bell peppers, and corn slightly to reduce the raw taste. Some people may not like raw veggies in this recipe, so grilling them is also a great option. The smoky flavor from grilling will make the Masala Corn chaat tastier. 

Add veggies as per your liking — This recipe is versatile; you can add veggies of your preference and completely omit the ones you don’t like. Vegetables with a crunch and different textures make the recipe more exciting and fun to indulge in. Vegetables like bell peppers, onions, tomatoes, cucumbers, and jalapeños add different flavors and textures, making corn chaat more appealing and filling. 

Stay moderate with the veggies — For this Fusion Indian appetizer, Masala corn chaat, use a moderate amount of vegetables. I like it with fewer veggies because adding too many can make the chaat soggy. Keep the vegetables minimal to maintain a good texture and avoid making them too heavy.

Protein variations — This dish is meatless and includes vegetables. You can add beans and grilled paneer cubes for extra protein, which is always a good idea.

INGREDIENTS 

CORN CHAAT INGREDIENTS

  • tablespoons Oil
  • 3 tablespoons Onion finely chopped
  • ½ cup Red Bell pepper finely chopped
  • cups Corn Kernels

INSTRUCTIONS

  • Heat oil in a pan. Reserve a tablespoon of onion and set it aside for later. Add the remaining onions and bell peppers to the hot oil.
    Sauté onion and bell peppers
  • Sauté the onions and bell peppers over medium heat until soft and glazed.
  • Add corn kernels.
    Add corn to the pan
  • Sauté for a further 4-5 minutes and take it off the heat.
    Sauté corn until soft
  • Transfer it to a bowl. Add lemon juice.
    Add lemon juice
  • Further mix in the reserved onions, tomatoes, green chilies, and cilantro.
    Assemble corn chaat
  • Add the spice blend.
    Add spices
  • Finally, drizzle the tamarind chutney and toss until all the ingredients are well blended.
  • Sprinkle with thin sev and crushed papdis.
    Add papdis and Sev
  • Serve immediately and enjoy.

RECIPE NOTES

 

Can this Chaat be made a day in advance?

Corn Masala Chaat comes together in minutes; therefore, I recommend preparing it fresh. But you sure can if you prefer to make it a day in advance.
I would opt out of adding lime juice, sev, papadis, and spices to the chaat and add it on the serving day. 
 

How long does Corn Chaat stay good?

This chaat stays in an airtight container in the refrigerator for a day . After that, the added salt will release its water, and the chaat will lose its texture as the veggies will become all mushy and watery.
