Thinking for cooking something different tonight for your family besides the traditional dal and rice, then this is a perfect meal for you. Presenting you a delicious and hearty meal – paneer shashlik with rice. Marinated paneer cubes grilled to-perfection are super simple to make. Serve it over bed of rice topped with tangy sauces and it will surely be a big hit tonight! Tasted this version of paneer shashlik at one of my favorite heritage hotels and since then I was on a spree to cook the same. For me shashlik is type of kebab and cooking a kebab means marinating the main ingredient in curd and spices but this recipe was totally different and lip-smackingly good. So sit back and enjoy my version of paneer shaslik.

RECIPE DETAIL – Though it look too many ingredients and steps to work with, but believe me this meal is easy to prepare and the steps are pretty simple. First part of the recipe involve marinating and cooking paneer along with veggies in spicy sauces. This meal has a slight spicy touch and I have tried to balance it with ketchup but if you are not a spicy-eater then double the quantity of ketchup in the recipe. You are free to add veggies of your choice like mushrooms, baby corn and snap peas; but for me I preferred just onions and bell peppers (capsicums).

Final recipe gets a makeover by preparing a tangy sauce and is served over bed of warm rice. This is one vegetarian delicacy that will please your tastebuds and you will crave for more. Paneer can be substituted with tofu and all my chicken lover friends can switch paneer with chicken.

No barbecue sauce, no worries! Try this – Mix 1/2 cup of tomato ketchup, 2 tablespoon brown sugar, 1 tablespoon vinegar, 1/4 teaspoon red chili powder and 2 tablespoon worcestershire sauce. Heat a pan and add all the ingredients. As it starts to simmer, take it off the flame and homemade barbecue sauce is ready. Do give this recipe a try and I am sure you are going to enjoy it as much as I do. 🙂

INGREDIENTS 

PANEER MARINADE

  • 15-20 cubes of Paneer or Tofu
  • 1 clove of Garlic, chopped
  • 1 small Green capsicum, cubed
  • 1 small Red Capsicum, cubed
  • 1 small Onion, cubed
  • 1.5 tablespoon Homemade Szechuan sauce
  • 2 tablespoon Tomato Ketchup
  • 1.5 tablespoon Soy sauce
  • 1 tablespoon Barbecue sauce
  • 2 tablespoon Cornflour
  • Salt to taste
  • 2 tablespoon Olive oil

SAUCE INGREDIENTS

  • 2 tablespoon Finely Chopped onion
  • 2 cloves of Finely chopped garlic
  • 1/4 cup Finely chopped red and green capsicum
  • 2 tablespoon Tomato puree
  • 2 tablespoon Tomato Ketchup
  • 1/2 tablespoon Red chili sauce
  • 2 tablespoon Soy sauce
  • 1.5 tablespoon Barbecue sauce
  • 1 tablespoon Cornflour Mixed with enough water to make a thin paste
  • Salt to taste
  • 2 tablespoon Olive oil

INSTRUCTIONS

PREPARING PANEER SHASHLIK

  • Assemble: all the ingredients. Wash and cut veggies in cubes.
  • Assemble: all the sauces.
  • In a pan combine szechuan sauce, soy sauce, ketchup and barbecue sauce.

  • Add paneer cubes to this mixture.
  • Add capsicums..
  • Add onions..
  • Mix and coat all the veggies and paneer. Allow it to sit for 30 - 40 minutes.
  • Soak wooden skewers in water for 30 minutes. Remove from water, pat them dry and arrange paneer and veggie cubes on wet skewers.

  • Heat and grease a tawa or griddle. Put paneer and veggies on a skewer..
  • Cook on this hot griddle.
  • Cook until evenly grilled from all the sides. You can do this in a convention oven or an OTG. Set the grilled paneer aside.

PREPARING GRAVY

  • Meanwhile lets prep up the gravy. Assemble: all the ingredients.
  • Add cornflour in a bowl and add enough water to make liquidy paste.
  • Heat oil in a pan, add chopped garlic..
  • Add onions and chopped veggies to this hot pan. Cook for a minute and mix in tomato puree.
  • Add ketchup, chili sauce, barbecue sauce and soy sauce. Mix it well.
  • Pour in cornflour mixture. Add salt.
  • Shashlik sauce is ready. Feel free to add more water if you prefer a thin sauce.

ASSEMBLING PANEER SHASHLIK

  • Time to assemble. In a bowl add boiled rice..
  • Generously pour some sauce on top.
  • Add paneer cubes, sprinkle some chopped green onions and enjoy!!
  • If you prefer, pour some extra sauce on top and serve.
