Lohri and Makar Sakranti are around the corner and markets are filled with sights of til sweets, peanut chikki and gur/jaggery desserts. Til and jaggery are an essential part of this festive season. In winter months til desserts are consumed to mark the harvest season around India. Til or sesame seeds have a nutty flavor and they are considered as anti- inflammatory and a healing condiment. 

Til ke ladoo recipe also known as TILKUT is prepared by combining gur, mawa, sugar, chopped nuts, desiccated coconut with toasted sesame seeds. If you have mawa then skip the part of converting ricotta cheese into mawa. Toast sesame seeds to a point where they are lightly toasted, overcooking them will result into dark bitter tasting sesame seeds. 

This recipe also calls for 2 tablespoon of gur/jaggery- according to one’s preference you can swap gur/jaggery with sugar and adjust sugar in the recipe accordingly. Adding sugar will moist up the whole mixture making it easier to shape ladoos. INGREDIENTS
  • 1.5 cups White Sesame (Til)
  • 1/2 cup Ricotta Cheese (or Mawa)
  • 3/4 - 1 cup Superfine Sugar
  • 1/2 cup Desiccated unsweetend Cococut (optional)
  • 2 tablespoon Gur or Jaggery (optional - adjust sugar accordingly)
  • 2 teaspoon Cardamom Powder
  • Handful of Chopped nuts Cashews, almonds and Pistachios
  • 3/4 cup Ghee
CHANGE SERVING SIZE: PIECES
CHANGE UNITS:
METHOD
  1. Assemble all the ingredients. In a pan dry roast sesame seeds on a medium flame until light brown.
  2. Allow it to cool down. Meanwhile heat pan and add ghee and ricotta cheese to it. Keep stirring till ricotta cheese turns into mawa. If you are using mawa skip this step.
  3. In a mixer grind and powder the cooled sesame seeds. Add gur to mawa and mix it well. If not using gur adjust the sugar accordingly.
  4. Add powdered sesame to mawa and mix it well. Keep stirring till it is well blended with mawa.
  5. Stir in cardamom powder, chopped nuts and mix.
  6. Add sugar...
  7. Desiccated coconut ,chopped pistachios and stir it well.
  8. Remove pan from heat and set aside to cool. The mixture will be moist enough to form ladoos. Take some mixture in your hand and form them into small golf shaped balls.
  9. If you prefer roll them in some toasted sesame seeds...
  10. Til ladoos are ready. Store them in airtight container and enjoy!!
