  • 1 small Red bell pepper chopped
  • 1 small Onion chopped
  • 3 tablespoons Fresh Cilantro leaves chopped
  • 1 medium Avocado peeled, pitted and cut into cubes

  • Transfer black-eyed peas, corn, diced onions, diced red bell pepper, diced tomatoes, cilantro, and diced avocadoes to a large mixing bowl.
    Toss to combine. Cover and chill the salsa in the refrigerator for 30 minutes.
