Ingredients

FOR THE SHAKE

  • 2 cups Fresh Strawberries ripened and juicy
  • ¼ cup Unsweetened coconut flakes
  • 1 teaspoon Strawberry extract (optional)
  • 1 cup Coconut Milk or regular milk
  • ½ cup Coconut cream or regular cream

Instructions

PREP-UP STRAWBERRIES

  • Rinse the strawberries thoroughly in cold tap water. Drain and pat the berries dry with a clean towel. Trim the green leaves from the strawberries.

  • Transfer the strawberries, coconut flakes, coconut milk, coconut cream, and extract to a food processor.

  • Purée for a few seconds until your shake is perfectly smooth, creamy, and everything has been well-incorporated.
  • Pour into two glasses.
    Tip — Serve in frosted glasses — Frosted glasses retain the chilled drink for longer, so it is great to serve the shake in frosted glasses. The shake keeps chilled till the last sip, and you can enjoy it till it lasts!
  • Top with some whipped cream and sip away!

How to store leftover Strawberry Coconut Shake?
Freshly prepared Strawberry coconut shake is on a different level. Therefore, I do not recommend storing it in the fridge for more than 4-5 hours.
Leftover shakes can be stored in the freezer but in a different way.
If you have popsicle molds, fill them with the leftover shake, drop popsicle sticks inside each cavity and freeze. Your fruity popsicles are ready to be feasted upon.
 
Do I need to freeze the Strawberries?
When using chilled coconut milk, you may go for fresh strawberries, just like I did.
However, frozen fruits create the thickest, creamiest, and super chilled shakes, so I always suggest using them in milkshakes made without the ice cream.
