This gluten-free Sabudana Vrat Dosa prepared with tapioca pearls is sure to be your next favorite. It’s super easy to make, flavorful with a crispy crust.
Soak Sabudana and grain - Rinse and soak sabudana for 3-4 hours. After the resting time is over, wash again, and drain the water.
Create Dosa Batter - Transfer the soaked grains to a blender, add buttermilk and blend until smooth. Add salt, sugar, and mix until incorporated. Whisk it well.
Prepare Potato Filling - Heat oil in a pan, add curry leaves, mustard seeds, and all the spices. Stir in potatoes and mix them well. Take it off the heat and allow it to cool.
Assemble Dosa - Heat a skillet on medium-high heat. Pour 2-3 ladles full of batter on the skillet. Spread the batter in a circular motion. Drizzle ghee or oil all around the dosa and let it cook.
