Indian spices also known as “masala” are an essential part of Indian cooking. These spices are often stored in a “Masale Dani”which means Spice Rack.We all love the aroma of Indian Spices. Whether it be Cumin seeds or Carom seeds, they all motivate me to experiment with them.. Together they make Indian food so yummy and aromatic.. Shopping for them could be quite a challenge as the spice isle at your local Indian store can be very confusing. So if you want to cook Indian food then your pantry must be stacked up with at least 25 must have Indian spices-

1. Bay Leaves
2. Cinnamon
3. Cloves
4. Cumin Seeds
5. Coriander Powder
6. Carom/Bishop weeds (Ajwain)
7. Garam Masala
8. Mustard Seeds
9. Green Cardamom
10. Curry Leaves
11. Saffron
12. Turmeric
13. Mango Powder (amchur)
14. Fenugreek leaves (Kasoori Methi)
15. Red Chilli powder
16. Nutmeg
17. Moti Elaichi (Black cardamom)
18. Asafoetida (hing)
19. Black Pepper (Kali mirch)
20. Fennel seeds (Saunf)
21. Methi seeds
22. Tamarind
23. Red pepper in pods
24. Pomegranate seeds
25. My all time favorite is dried mint leaves.  So, what’s your favorite spice in the pantry?

    Do you know which spice is dark (very) brown in color? bought in middle east and can’t remember. Looks almost like the color of coffee grinds. need some help
