Dry and Liquid Kitchen Substitutes

Did you ever find yourself in a situation where you run out of a certain ingredient, right in the middle of preparing a recipe and needed something fast to substitute it? Here is my collection of handy substitute chart which I always keep on hand, just in case.


Dry and Liquid Kitchen Substitutes


Baking Soda1 TeaspoonMix 1/2 tsp. Cream of tartar + 1/4 tsp. Baking soda
Bread Crumbs1 Cup1 cup non salted finely crushed cracker crumbs OR corn flakes
Brown Sugar1 Cup1 1/4 cup fine sugar or confectioner's sugar
Butter1 Cup1 cup vegetable oil
Cake Flour1 CupAdd 1 cup all-purpose flour then minus 2 tablespoons of flour and add 2 Tablespoon of pudding or pie filling mix
Chocolate (Semisweet )1 Oz.Mix 1 Tablespoon unsweetened cocoa powder + 2 tsp sugar +
2 tsp butter OR vegetable oil
Chocolate (Unsweetened )1 Oz.Mix 3 Tablespoon Cocoa + 1 Tablespoon Butter
Cornstarch1 Tablespoon2 Tablespoon all-purpose flour
Cocoa1/4 Cup1 ounce unsweetened chocolate
Cream Cheese1 Cup1 Cup Whipped Ricotta Cheese
Cream of Tartar1 Teaspoon2 teaspoons lemon juice OR vinegar
EggEgg Substitutes
Egg12 egg whites; or 2 eggs yolks (for custards and puddings): or 2 egg yolks plus 1 tablespoon water (for cookies and bars)
Flour, cake OR Cake Flour1 cup1 cup minus 2 tablespoons of all-purpose flour
Garlic1 Clove1/8 teaspoon garlic powder
Ginger1 Teaspoon chopped1/2 teaspoon dried ginger powder
Fresh Herbs ( Basil, thyme, marjoram, parsley, mint etc.)1 Tablespoon1 teaspoon dried herbs
Gelatin1 TeaspoonAgar agar - Made from red algae, agar is used in Asian desserts and jellies. Good option for vegetarian people
Lemon zest1 Teaspoon2 tablespoons lemon juice
Mascarpone cheese1 Cup1 cup sour cream
Mustard Seeds1 Tablespoon1 teaspoon ground mustard (dry)
Onion Powder1 Tablespoon2 tbsp. minced dried onion OR 2 tsp. onion paste OR 5 tbsp. onion juice.
Paneer1 Cup1 Cup Tofu
Raisins1/2 Cup1/2 cup currants, dried cherries, dried cranberries, chopped dates
Ricotta cheese1 Cup1 Cup Tofu
Self Rising flour1 Cup Mix 2 cup of flour, 1 teaspoons salt, 1 tablespoons of Baking powder .
Tomato Ketchup1 CupMix 1 cup tomato sauce + 1/2 cup sugar + 2 tablespoons white vinegar.
White Sugar1 Cup1 cup Brown Sugar


Balsamic Vinegar1 tablespoon1 tablespoon sherry or cider vinegar
Buttermilk1 CupMix 1/4 cup milk + 3/4 cup yogurt
Buttermilk1 Cup1 Tablespoon vinegar + 1 cup milk
Broth1 CupUse water in place of stock and season it up a bit more than what the recipe calls for.
Beer1 CupUse Chicken broth OR Ginger Ale OR Apple cider
Cornsyrup1 CupMix 1 cup of sugar and 1/4 cup water
Cream - Heavy1 CupMix 3/4 cup milk + 1/3 cup butter OR
Mix 3/4 cup milk + 1/4 cup shortening/butter OR
2/3 cup evaporated milk.
Cream - Whipped1 CupWhisk together 1/3 cup of softened butter + 3/4 cup of milk
Evaporated milk1 cup1 cup cream, whipping, regular or heavy cream OR 3/4 cup whole milk + 1/4 cup half-and-half
Half-n-Half1 CupMix 4-1/2 teaspoons melted butter + enough Full cream milk to equal 1 cup.
Honey1 Cup1 1/4 cup granulated sugar + 1/4 cup recipe liquid (use the liquid asked for in the recipe) OR
1-1/4 cups sugar + 1/4 cup water of apple juice
Lemon Juice, fresh1 Tablespoon1 tablespoon bottled lemon juice from concentrate, OR white vinegar
Mayonnaise1 Cup1 cup hunged beaten yogurt
Milk1 Cup1/2 cup evaporated milk + 1/2 cup water OR
1/2 cup condensed milk + 1/2 cup water
Orange Juice1 Cup1 Cup any juice that is citrus in nature like pineapple, lemonade, lime juice or grapefruit.
Orange Zest1 Tablespoon1 teaspoon lemon juice or lemon zest ( will change the flavor though) OR orange flavoring
Shortening1 Cup1 Cup Butter
Sesame Oil 1 TeaspoonMix 1/2 teaspoon canola oil + 1 1/2 teaspoons sesame seeds
Sour Cream1 Cup1 Cup Low-fat Plain Yogurt Or 1 cup buttermilk
2 Tbsp. white vinegar + enough milk to make 1 cup, let stand 5 minutes before using OR
1 tbsp. lemon juice and enough evaporated milk to make 1 cup
1 cup plain yogurt OR cottage cheese mixed with yogurt
Vinegar 1 Teaspoon1 teaspoon lemon or lime juice
Tomato Juice1 Cup1/2 cup tomato sauce + 1/2 cup water
Tomato Puree1 CupTomato sauce OR 1/3 cup tomato paste + 1/2 cup water.
Tomato paste1 Tablespoon1/4 cup tomato sauce and eliminate some other liquid from the recipe.
Tomatoes, canned1 CupAbout 1-1/3 cups cut-up fresh tomatoes, simmered 10 minutes
Yogurt, plain1 Cup1 cup sour cream
