BLOOM AGAR-AGAR
If you are using agar-agar for this panna cotta, you must first mix it with cream.
Whisk and let it rest for 4-5 minutes, and allow it to bloom.
HEAT COCONUT MILK
In a saucepan over medium-low heat, add the whole can of coconut milk (whisked milk + cream) and add sugar.
Whisk until combined.
Pour the bowl of bloomed agar-agar into this mixture, and mix well with a whisk.
Stir well as the cream mixture starts to heat up.
Keep stirring constantly until the mixture thickens and barely coats the back of a spoon. This will take about 2-4 minutes over medium-low heat. Take the saucepan off the heat. Add coconut extract and mix it well.
Pass the mixture through a sieve to catch any undissolved agar-agar.
This step is essential for a silky smooth panna cotta.
CHILL
Pour the mixture into 4 or 5 ramekins. Cover and transfer the ramekins to the refrigerator to set for 4-6 hours, or overnight.
When the center of the panna cotta feels firm to the touch, it’s set and ready to serve.
UN-MOLD
Once the dessert has set, dip the ramekins (one at a time) into a bowl filled halfway with hot water. Allow the coconut panna cotta to sit in the water for about 3-4 minutes. Or you can carefully run a knife around the ramekins to loosen the panna cotta.
Turn the ramekins onto a serving plate and shake slightly to loosen.
The panna cotta will slide out easily.
Top with strawberry coulis and enjoy!
Frequently asked questions
Can I prepare Panna Cotta ahead of time?
Yes, you can prepare your Panna Cotta ahead of time and store it in the fridge until you need to serve it. Keeping it in the refrigerator would require you to cover it with a cling sheet and slide it in.
When storing it, do not add any fruit toppings or fresh fruits to alter the dessert's texture. Add the toppings just before serving.
How long does Panna Cotta stay fresh?
You can comfortably store Panna Cotta for 4- 5 days in the fridge. It will stay fresh and in the best condition to be consumed.
Can I store Panna Cotta in the freezer?
I would not recommend that. This dessert is not freezer-friendly because of agar-agar. If you store it in the freezer and then keep it out to thaw, it will lose shape and texture.
