Cook noodles as per package instructions.
Drain through a colander and set aside.
Whisk peanut butter, sesame oil, red chili and soy sauce together. Add water to make a smooth paste.
Sauté ginger, garlic, and veggies. Add the noodles and sauce.
Mix until noodles are well coated in sauce.
