These bite-sized, grab-n-go snacks are naturally sweetened with apricots and raisins for a healthy snack. Additionally, these no-cook bites are packed with protein, healthy fats, and fiber, all thanks to almonds and walnuts.

Has it been a long and dreary day, and need a refreshing snack to fuel you with some energy to make it through the day, then these energy bites are the perfect recipe for you. 

Energy bites, or energy balls, whatever you call them, these healthy snacks will curb your hunger pangs at any given time.

No cook apricot bites come together with eight healthy ingredients and require no cooking at all, none so ever.

Plus, with no added sugar, these portable snacks are perfect as a lunchbox snack or after school snack.

A QUICK TIP – If your kids have after-school activities, these apricot bites will come in real handy. 

What are Energy Bites 

Energy bites are simple yet straightforward; nutritious snacks usually made with dry nuts, oats, candied fruits, dates, coconut, and many other simple ingredients.

These bites are usually no-cook and raw.

All the ingredients are tossed together in a food processor to form delicious little snacks – that are full of minerals and vitamins that will power your body with energy.

Personally, I always have a supply of these healthy energy bites on hand.

What goes into No Cook Apricot Energy Bites

These no-cook bites are made of eight simple ingredients. Trust me; it’s loaded with all good stuff and nutrition. 

» Dried Apricots – The key ingredient and a natural sweetener that helps bind everything together. Dried Apricot is an extremely delicious, and versatile fruit to play around with.

» Raisins – for extra sweetness and add moisture to these bites. 

» Almonds + Walnuts – lends a deliciously crunchy flavor and provides an extra dose of protein and healthy fats.

» Desiccated unsweetened Coconut – adds a sweet, nutty flavor. 

» Flaxseeds – absorbs moisture and provides the right amount of protein, fiber, and omega-3 fatty acids.

» Vanilla essence 

» Cinnamon Powder – for extra flavor.

How to make No Cook Apricot Energy Bites?

1. Transfer apricot, walnuts, raisins, almonds, flaxseeds, coconut, and cinnamon powder to a food processor. 

2. Pulse. Pulse a couple of times to combine.

3. Add vanilla essence and mix until blended.

4. Roll the “apricot dough” into balls. Enjoy them as is or dust the energy bites with desiccated coconut.

This recipe can easily be adapted to many different combinations. Choose your favorites to suit whatever cravings or dietary restrictions you may have.

» If the pulsed mixture feels sticky, add an extra teaspoon of coconut. Coconut will absorb the moisture and take care of the sticky dough. 

» Allergic to almonds? Try cashews instead. 

» No-cook energy bites won’t bind? No worries, add a tablespoon of maple syrup or any nut butter, and that should do the trick. 

» Feel free to leave raisins out if you prefer moderately sweet bites.

» For extra protein, add a scoop of your favorite vegan protein powder after pulsing the ingredients. 

» Vanilla essence can be substituted with almond extract.

» I have not added sugar to these energy balls, as they are naturally sweet. But feel free to add 1-2 teaspoons of honey/sugar and adjust to taste.

» A perfect make-ahead recipe! Make a big batch of these apricot bites ahead of time and munch on them whenever you crave for something sweet. 

» Also, they are the perfect hassle-free on-the-go portable snacks!

    These are fantastically healthy and I absolutely love them. However, saying that they are “sugar free” is very false. Apricots contain fructose which is a sugar. They may not have added sugar, but they do in fact have it. =) Thank you for the really great recipe.

      I second that thought. It’s mentioned in the post that no sugar is added to these bites and they are sugar-free. Was meaning to write no added sugar but wrote “sugar-free”. Thanks for pointing that out, will fix that.

    I omitted the flax seeds, and added some grape juice, and we had this as part of our Pesach seder charoset tasting plate. They were a HUGE hit, and everyone loved them. This will definitely become a standard for us.

    Nice recipe! You have provided me with a healthy base recipe, I can experiment and play around with the ingredients in the way I like. I make these often now at times with sunflower seeds and dates and sometimes with prunes, chia seeds and nuts.

    I see raisins as an ingredient however they’re not in any of the photos … did you make it with raisins truly? Seems like it may throw the taste off a bit. However, they look amazing and like they will help me get over any humps in my new sugar-less lifestyle. =)

      Yes, raisins are not shown in the pictures as they were added in the last to adjust sweetness (that’s mentioned above in the post). Overall, they tasted good.

    When using the raisins in the recipe, do you pulse them in the food processor or mix them in whole at the end?

      Ruth, as mentioned in the post raisins were added later to the mix to adjust the sweetness. But feel free to pulse them along with rest of the ingredients. Thanks!

    Do you think I could make these with frozen apricots? If so, what could I use to dry the batter up?

      Shirley, frozen apricots needs to be dried for this recipe. That’s a long process. For that spread frozen apricots in a single layer on a baking tray and place it in an oven. Set the oven temperature to 200 degree F and let it dry for 6-8 hours.
      I would suggest please use dried apricots for this recipe and save frozen apricots for smoothies and shakes. 🙂

    thanks for the recipe but I felt I needed to say my balls were so dry they didn’t stay together until I put some coconut oil and a little bit of maple syrup which was not what I was wanting as its so sweet. I am not sure why it was so dry. I did follow the recipe.

      Yes, that has happened to me too (dry apricot balls).
      This happens if the fruit (apricot and raisins) is too dry. The mixture doesn’t bind well and feels crumbly. A tablespoon of coconut oil added to the mixture solves the issue. 🙂
