I have to share a little secret here. Not only my kids, I love jelly too. 🙂 🙂 

Eating jelly awakens my inner child as well. While eating this scrumptious little blob, my kids and I play around poking it, jiggling it, and making it dance all over our plate.

NOW ONTO THE RECIPE!Homemade Vegan Strawberry Jelly

I love the simplicity of this recipe and have made it several times in my kitchen. All it requires is 5 basic ingredients and the time to set. 

I have used fresh strawberries here but feel free to experiment with the fruit of your choice. Some of my other favorites are –

  • watermelon
  • raspberry
  • lemon
  • orange
  • kiwi and the options are endless. 

Boil the fruit juice of your choice along with water, sugar and agar-agar powder. Add extract, and allow it to cool for few minutes. Pour into cups and chill until set.

Since no artificial color is added, the color of jelly will depend entirely on the strawberries. The sweeter the strawberries, the richer the color. But the color doesn’t seem to matter to the kids at all. The will love the jelly anyhow!

WANT TO FANCY IT A BIT?

Instead of pouring the jelly into individual servings, make fun shapes out of it. Pour it into –

  • the ice cube trays
  • square tray and use a cookie cutter to make fun shapes
  • or in a fancy mold – star wars, stars, gummy bears, minions and many others kid’s favorite characters. 

This will make a perfect play-date treat or after-school snack for kids. Just like my kiddos, your kids too will love this jiggle-wiggly jelly. 🙂

INGREDIENTS
FOR HOMEMADE STRAWBERRY JUICE
  • 2 cups Organic fresh Strawberries
  • 1.5 cup Water
  • 2 tablespoon Sugar
FOR JELLY
  • 1/4 cup Sugar
  • 1 teaspoon Agar-Agar powder
  • 1/2 teaspoon Strawberry extract
CHANGE SERVING SIZE: SERVINGS

METHOD
  1. TO MAKE STRAWBERRY JUICE - Wash strawberries and trim the top off.
    Fresh Strawberries
  2. Combine strawberry, water, and 2 tablespoon sugar in a bowl.
  3. Over medium heat, bring this mixture to a boil. Turn the heat down and continue to simmer for 40-50 minutes.
  4. Remove from heat.
  5. Strawberries will lose its color during boiling.
  6. Strain the mixture through a fine-mesh strainer into a clean bowl. Use a spoon to press down on the strawberries to release all the juices.
  7. The juice, in the end, should be clear. Strain again, if you see some pulp in the juice. This should yield about 1 cup of strawberry juice.
  8. Assemble other ingredients - sugar and agar-agar powder.

  9. Combine sugar, strawberry juice, water and agar-agar in a pan. Whisk until completely dissolved.

  10. Bring this mixture to a boil. Boil for 2-3 minutes on medium-low flame. Boil it to the point where you dip a spoon into it while cooking and it coats the spoon. Over boiling may result in rubber-like texture. Remove from heat and stir in the strawberry extract. This will mask the smell of agar-agar and add a depth of flavor. Tip - Many homemade jellies appear cloudy and hazy because of the particles left behind in the juice. You can correct this by filtering the liquid through a fine strainer. All the small/tiny particles will be collected in the strainer and you will end up with a crystal clear jelly.

  11. Allow it to cool for few minutes. Keep stirring as agar-agar will start to set. Pour in glasses. Before setting, make sure that jelly has no bubbles on top because it will set with bubbles. Smoothen the top with a spoon and refrigerate.

  12. Refrigerate until set. The color of jelly will depend on the color of the strawberries.
  13. Enjoy chilled!! Or you can set the jelly in fancy molds, and enjoy!

    The taste is good. But the jelly of mine is hard. How to solve this?

      Dr. Martin,

      For how long did you boil the liquid? Over boiling will result in rubber-like texture.
      To fix that – Try to reprocess it. Transfer the jelly back to a pan. Add more strawberry juice (1/4 cup) and bring it to a boil. Boil it to the point where you dip a spoon into it while cooking and it coats the spoon. Remove from heat allow it to set.

    Hi Ruchi… Thanks for this lovely recipe … Just one question ….before adding the agar-agar, the strawberry juice looks like jelly (transparent) …. how did you manage that … I am referring to Step 5 – before addition of agar-agar.

      That’s the clear strawberry juice that you get after boiling/straining strawberries.
      Have updated the recipe with correct picture.

    How come my mixture was hazy instead of a tranparent juice like yours?

      Mokshi, that happens if agar-agar was not dissolved well.
      Many homemade jellies appear cloudy and hazy because of the particles left behind in the juice. You can still correct this by filtering the liquid through a fine strainer. All the small/tiny particles will be collected in the strainer and you will end up with a crystal clear jelly.
      One more thing – Before setting, make sure that jelly has no bubbles on top because it will set with bubbles. Smoothen the top with a spoon and refrigerate to set. 🙂
