Healthy Quinoa and bean salad - Ruchiskitchen.comAre you tired of eating the same old salads, again and again? All you see in them now is the same old lettuce, paired with some type of protein/veggies coated in some ordinary dressing; does this picture sound familiar to you? Healthy Quinoa and bean salad

It sure does to me! Then, why not change your image of an ordinary salad by making it with a healthy quinoa and bean salad instead.

The inspiration for this salad is – the health quotient of quinoa.

The health benefits of quinoa alone is the reason why this salad makes it to my list of nutrition-rich meals. Quinoa is the perfect food for anyone, it can be paired with literally anything, and best of all its gluten-free, vegan, and extremely healthy.

Now onto the recipe!

Making a healthy quinoa and bean salad is a breeze. Anyone could do it, and it requires little to almost no cooking. You only need to boil the quinoa; the rest afterward is a simple mix of your taste.

The base for this salad is quinoa. I have to add here that please make quinoa a part of your diet.  Quinoa is rich in fiber, iron, magnesium, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants. It’s a complete health food.

For some crunch and color, I have added bell pepper, cucumber, and onions to my salad.

Corn kernels add the perfect sweetness and the earthy flavor comes from the black beans.

Overall a nutritional healthy salad that is bursting with flavor and totally addicting!!

The highlight of this salad is the delicious Vegan dressing. This homemade dressing adds a burst of flavor and a refreshing lemony kick to the salad!

Combine and mix all the ingredients thoroughly in a bowl and voila, you have gotten a delectable salad ready for you and your family in less than 30 minutes.

A very versatile salad!

The best part about Quinoa salads is that they can be customized to one’s taste. Almost any ingredient in this recipe can be substituted with some other one.

For example, black beans can be swapped with the beans of your choice – kidney beans, garbanzo beans or navy beans.

All the veggies can be mixed with some more colorful/seasonal ones to create a zesty combination of tastes.

You can even add the dressing you like best making it the perfect salad according to your taste.

For extra flavor and a protein-rich salad, feel free to add in the protein of your choice.

So, if you are looking for a salad for a game night or potluck or backyard picnicking than this healthy quinoa and bean salad has your name written all over it. As an added bonus, its –

  • Vegan
  • Gluten free
  • Light
  • Colorful
  • Filling
  • and makes a great lunch box meal.
