- ¼ cup Roasted red bell pepper Hummus
- 1 large Cucumber peeled and cut into rounds
SALSA
- 1 cup Corn Kernels
- 1 cup Black Beans (drained and washed)
- 2 medium Tomatoes finely chopped
- 1 teaspoon Cumin powder
- ½ teaspoon Garlic
- ½ teaspoon Dried cilantro leaves – crushed
- – – Salt to taste
GARNISH
- – – Cilantro leaves
INSTRUCTIONS
- Combine all the ingredients listed under 'SALSA' in a bowl. Mix it well. Adjust the seasonings and set it aside.
