What makes up Black Bean Corn Salsa Cracker Bites
A handful of ingredients is all you need to create this irresistible finger food, and they are-
» Crackers – Personally, I like Ritz whole wheat crackers are they are vegan, but you can use your favorite crackers. If you or your guests happen to be gluten-free, you can try this Black bean corn salsa bites with rice crackers or any gluten-free crackers.
» Roasted red bell pepper hummus – Homemade works the best, but if you are not a time crunch, store-bought works great as well.
» Cucumber – peeled and cut into rounds.
» Salsa – made up of corn kernels, black beans, finely chopped tomatoes, and cilantro. I would recommend making the salsa at home because store-bought black bean and corn salsa will be watery and may make the crackers soggy and wet.
» Seasonings – such as cumin powder, garlic, salt, and dried cilantro leaves to flavor our cracker bites.
» Cilantro leaves – You need a tiny bit of cilantro to top the cracker bites. Do not overload, or it will become too overpowering.
How to make Black Bean Corn Salsa Cracker Bites
Make sure you have everything ready before you start staking your cracker bites –
- The crackers
- Roasted red bell pepper hummus
- Black bean corn salsa
- Cucumber rounds – sliced to be about an inch or two big.
- And the garnish
Spread a layer of roasted red bell pepper hummus on each cracker. Layer it with a cucumber slice.
Then add two teaspoons of black bean and corn salsa on top. Not too much, just two teaspoons. We don’t want the salsa running off the bites.
Lastly, sprinkle the bites with chopped cilantro leaves. Repeat these steps with all the crackers, and that’s it! You are all done.
Quick and easy black bean corn salsa cracker bites are ready in no time. Arrange these bites on a large tray, and you have yourself a perfect party hors d’oeuvres brimming with vibrant color, flavor, and texture.
Recipe tips to make Black Bean Corn Salsa Cracker Bites
» I chose hummus because it’s easy to spread, full of flavor, and low in calories. If you don’t want to use roasted red bell pepper hummus, you can use regular hummus or flavored cream cheese instead.
» Make the salsa and hummus ahead of time to allow the flavors to blend. Store it for a day in an airtight container in the refrigerator.
» For added nutrition, feel free to add colorful veggies to these corn salsa cracker bites.
» These bites are completely customizable. You can easily scale the ingredients up or down to suit your needs.
» This recipe feeds a group of 15, so consider doubling the cracker bites for a large gathering or halving for a small party. Trust me, even when I double the recipe, I end up with an empty tray as these bites disappear from your appetizer table long before you know it.
» These salsa cracker bites should be made just before serving, and leftovers cannot be stored once assembled.
So if you want to serve a vegetarian appetizer for your party, try these cracker bites as they will surely impress your guests. I bet you won’t get an easier fix for entertaining!
