How to make Chicken Broth and Chicken shreds

Step-by-step homemade chicken broth. There are many ways to make chicken broth. I was in desperate need of chicken stock so I used boneless chicken in my recipe but an ideal way to prepare chicken broth is by using a whole chicken with bones – why waste the good part. To make chicken broth, chicken is simmered with aromatic spices and vegetables and cooked on low flame for 2-3 hours.Making your own chicken broth is always the best as it is fresh and very simple. If you have a slow cooker just toss all the ingredients and let it boil for 2-3 hours.

Chicken broth is an excellent base to prepare soups and pasta recipes. I was always in the assumption that chicken stock and broth are the same thing because they both basically follow the same procedure so what’s the big deal. After researching I learned that chicken stock is usually unseasoned chicken liquid whereas on the other hand chicken broth is seasoned with wines and spices and can be served as is. Whether be stock or broth both have a  special place in my cooking and I prefer not to season them with salt as it gives me full control of how it get seasoned in different dishes. Also its gets a tagline – LOW SODIUM CHICKEN BROTH.

INGREDIENTS– WILL YIELD 3 CUPS OF BROTH

6-7 pieces of Chicken or 1/2 kg chicken

    1.5 tablespoon Italian seasoning

    1 tablespoon Lemon Pepper seasoning

    1 medium onions, roughly chopped

    3-4 garlic cloves

    2 bay leaves

    1 teaspoon black pepper

    Salt to taste

    4 cups of water

METHOD – Follow the step-by step guide to a homemade chicken broth. Mix everything in a pan and allow to boil for 2-3 hours. Strain the broth through a colander, save the chicken and discard the rest. You can either freeze this for future use or enjoy as is.

FOR CHICKEN SHREDS – After separating chicken from stock – wash it under cold water and using a fork shred it as thinly you prefer. Use it in soups, sandwiches and salads.
