Just like lauki/bottle gourd, cabbage is another ingredient that can be used in no onion no garlic cooking. Compare to lauki, its water content is 92% and is very low in saturated fat and cholesterol but loaded with dietary fiber and other nutrients. Add this to a gravy to add some extra nutritional value. 

During fasting periods like Navratri, Ekadashi, Mahashivratri, Pooranmashi vrat – people eat one time meals cooked without onion and garlic.

If I am cooking without onion and garlic, I keep the following paste on hand – cashew paste, coconut paste, tomato paste, cabbage paste and lauki paste. No one can tell the difference as it tastes equally good and super delicious. Follow the step by step recipe below to this super nutritious dish.

INGREDIENTS– 

1 medium sized cabbage

1/4 cup water

METHOD – 

1.Peel and wash cabbage.

2. Add it to a pan along with 1/4 cup water.

3. Cover and let it simmer for 3-4 minutes or until tender.

4. Allow it to cool down completely. Blend it to a paste.

4. Store the paste in airtight container and use as directed.
