Asparagus * It is a perennial plant with an underground stem that produces edible shoots. High in folate and a good source of vitamin C and

Bell Peppers * It is large in size, the skin is thick and is mildly pungent, when ripe they are red, yellow or brown in color. Rich in vitamin C & carotene.
Beet Root * They are usually spherical with a small tap root, medium-sized and deep red in color. Rich in carbohydrates and a good source of folate.
Broccoli * It’s got lots of vitamin C and vitamin K . Good source of calcium, iron and potassium.

Bottle gourd * They are large and come in different shapes with numerous long white seeds. Rich in vitamins.

Red Cabbage *These are hard, tightly packed and crisp with dark red or crimson leaves. Traditionally they are cooked longer than green cabbages. Lemon juice, wine or vinegar must be added to preserve the lovely red color when cooked. High in vitamin C.
Spinach * They are round leaves which are green in color and have a smooth texture. High content of vitamin A. Also a very good source of fiber, Folate, calcium, iron and vitamin C. It also provides potassium.

Sweet Potatoes * They are usually, elongated and has a white or reddish purple skin. The inner flesh is usually white or yellowish in color. Rich in Vitamin A,C , Fiber, Potassium & Starch.

Yams * They do not have a fixed shape. They can be compared to potatoes in terms of texture & taste. Rich in carbohydrates. Also supply useful amounts of fiber and potassium.
Zucchini * A type of Squash. A good source of vitamin C and fiber.
