On my last trip to Singapore, I had a chance to eat at one of their popular food courts – Chinatown. It’s a superb food court with so many variations to choose from. At any stall – you pick a bowl size, choose your veggies, proteins, sauce, type of noodles and the cook prepares the dish for you. The end result – A satisfying and delicious meal! vegan spicy peanut noodles

This is the first time I tasted Cantonese style noodles and vegan spicy peanut noodles and fell in love with its awesome texture and flavor. The best part about these noodles – simple with handful of ingredients, really spicy and the sauces really brings out the flavor. 

Since then, I wanted to create the same flavors in my kitchen and ended up with my very own simplified version. I can’t say if it matches the authentic taste, but it is pretty close – yummy and intense in flavor.

Now, onto the recipe!

This vegan spicy noodles make a great weeknight meal. Assemble and slice the ingredients in advance and when ready to eat, stir the veggies, add sauce and toss in the noodles. Mix and dinner is ready. It’s that easy! The blend of peanut butter, soy sauce and chili sauce added a little kick to this recipe.

These peanutty noodles is a pretty basic recipe very adaptive and versatile. Feel free to play around with the veggies –

  • add more veggies and protein to your liking,
  • adjust the spice level to suit your taste buds,
  • protein can be added in the form of tofu, crispy paneer or meat.

Vegan spicy peanut noodles make a great leftovers. Sprinkle some water, reheat and there you have it – a perfect lunch for the next day. Do give it a try and I am sure you are going to love everything about this dish. It’s –

INGREDIENTS
INGREDIENTS FOR NOODLES
  • 1 LB packet of Thin spaghetti (454 grams)
  • 1 teaspoon Ginger paste
  • 1 teaspoon Crushed Garlic
  • 1/4 cup of Toasted Tofu pieces (optional)
  • 1 packet of Snap peas ( 227 grams packet) (or coleslaw)
  • 4-5 stalks of Chopped Green Onions
  • 3 tablespoon Olive oil
  • Salt to taste
SAUCE INGREDIENTS
  • 2-3 tablespoon Red chili sauce
  • 1/4 cup Peanut butter
  • 3/4 teaspoon Sesame Oil
  • 1/4 cup Soy sauce
  • 3 tablespoon Water

METHOD
  1. Assemble ingredients listed under sauce. To make peanut butter at home - roast 1/4 cup peanuts in a pan until light brown in color. Remove its skin. Add toasted peanut to a blender, add 2 teaspoon oil, 2 teaspoon honey and salt. Pulse until smooth and creamy.
  2. In a bowl combine all the ingredients.
  3. Whisk. Add water to make a smooth paste. Set it aside.
  4. Boil noodles as per package instructions.
  5. Drain and set it aside.
  6. Assemble rest of the ingredients.
  7. Wash and clean snap peas. Thinly slice them. Feel fee to use coleslaw instead of snap peas.
  8. Heat oil in a pan. Add ginger-garlic.
  9. Saute for a minute on a medium low flame.
  10. Stir in snap peas and saute for few seconds. Add salt and mix. Taste and adjust seasonings.
  11. Add boiled and drained noodles.
  12. Pour in the sauce.
  13. Mix until well blended. Add green onions and cover the pan.
  14. Take it off the flame and let it sit covered for couple of minutes.
  15. Top with some toasted peanuts and chopped cilantro leaves.
  16. Serve hot.
