Prep-up  Preheat the oven to 350°F. Brush the 9×5-inch loaf pan generously with cooking oil. Set it aside. 

Combine dry ingredients — Sift flour, baking powder, baking soda, cinnamon powder, and salt in a large mixing bowl. Sift the dry ingredients together, so there are no lumps of flour left behind. Set it aside.

Mix wet ingredients — Combine sugar and oil in a stand mixer bowl. Beat this mixture at high speed until they are thoroughly combined. Add mashed bananas and mix again. 

How to make eggless Banana walnut bread recipe

Combine wet and dry ingredients  Add the dry ingredients to the wet ingredients. Pour in extract, and buttermilk, and mix until all the ingredients are fully incorporated. Keep scraping the sides of the bowl as you mix.

Bake the cake — Pour the batter into the prepared greased loaf pan. Tap the pan against your countertop to eliminate air bubbles from the batter. Generously sprinkle chopped walnuts on top. 

Bake in the preheated oven for 45-50 minutes or until the toothpick inserted comes out clean. 

Remove from the oven and allow the bread to cool completely. Carefully un-mold the bread. Cut yourself a slice and enjoy it.

Substitute for plant-based buttermilk This recipe uses vegan buttermilk (almond milk), but you can use the regular buttermilk too. Buttermilk lends a rich and buttery texture to the bread.

Selection of oil You can use any oil for this recipe. Canola oil, melted coconut oil, and even melted butter (vegan) work great in providing the required moistness to the bread.

Use over-ripe bananas Over-ripe bananas are the secret to the moistest and fully flavored Banana Nut Bread. They produce the moistest bread as the starch in them has converted into sugar and turned super sweet and flavored. I prefer bananas with many brown spots on them as they are fully ripened.

Avoid over-mixing Do not over-mix the bread mixture as this will over aerate the batter, making it denser. It activates the gluten in the flour, yielding dry-textured bread. A delightful variation You can also turn this batter into banana muffins for those who are huge fans of muffins. Grease and line 12 standard-size muffin cups and pour in the batter. Bake them for 15- 20 mins at 350° F and do the toothpick test to ensure the doneness.
