Warm up your winter evening with a bowl of freshly made Tamatar ka shorba – spicy and flavorsome Indian tomato soup. Why is this recipe called tamatar ka shorba and not just tomato soup? Well, tamatar ka shorba or tomato shorba is a thick and spicy version of either a vegetable or meat gravy which has a soup like consistency. History of shorba dates back to Persian times and this soup is totally different from the regular tomato soup. 

RECIPE DETAIL – This soup is pretty easy to make and is ready in just about 30 minutes. Wash and chop tomatoes, add all the ingredients to a pressure cooker and cook for 4-5 whistles (20-25 minutes in a pressure cooker without whistle). Feel free to add carrots, spinach or any leafy vegetables of your choice to make it more flavorful. 

Tamatar ka shorba

Tomatoes will become soft and mushy, discard the whole spices and puree the boiled mix. The essence of shorba lies in its tadka or tempering. Just before serving give a tadka of toasted cumin seeds and this will add extra flavor and texture to this soup.This low-fat and warm soup makes a healthy dinner option and I always pair this soup with homemade breads – focaccia bread or honeycomb buns to create a hearty meal.

INGREDIENTS
INGREDIENTS NEEDED TO BOIL THE SHORBA
  • 6-7 medium Tomatoes
  • 1 small Onion
  • 1 small Green chili
  • 1 small piece of Ginger
  • 1 piece of Star Anise (Chakra phool)
  • 2 pieces of Whole Black Cardamom (Moti eliachi)
  • 2-3 pieces of Bay leaves (Tej patta)
  • 1 stick of Cinnamon (Dalchini)
  • 6-7 pieces of Cloves (Laung)
  • 2 pieces of Garlic
  • Salt to taste
  • 1.5 cup Water to boil soup
INGREDIENTS TO FLAVOR THE SHORBA
  • 1-2 teaspoon Coarsely crushed black peppercorns
  • 1-2 tablespoon Sugar or Jaggery
  • 1 - 2 tablespoon Cream (optional)
  • 1 tablespoon Oil
  • 2 teaspoon Cumin seeds (Jeera)
CHANGE SERVING SIZE: PEOPLE

METHOD
  1. Assemble all the ingredients.
  2. Clean and wash tomatoes.
  3. In a pressure cooker add tomatoes and...
  4. Add all the ingredients one by one. Feel free to add carrots, spinach or any leafy vegetables of your choice to make it more flavorful.
  5. Add water and cook for 4-5 whistles (20-25 minutes in a pressure cooker without whistle).
  6. All cooked raw ingredients.
  7. Discard the whole spices - whole cardamom, cinnamon, star anise, cloves and bay leaves.
  8. Using a hand blender - puree the boiled mix.
  9. Thick soup is ready. Do not sieve the soup - why waste all the goodness.
  10. Add sugar to balance the sour flavor from the tomatoes.
  11. Heat oil in a pan, add cumin seeds and as they start to crackle add it to the soup. Bring it to a boil. Feel free to play around- add some crushed garlic to the tadka and later season with some crushed roasted cumin seeds.
  12. Adjust seasonings and add crushed peppercorns.
  13. Garnish with chopped cilantro leaves and cream and serve hot.
