Sama rice Idli or vrat ki idli

And to top that, it’s Navratri week meaning simple and easy meals that require minimal time to cook and are healthy too. Today’s recipe is all about that – sama rice Idli or vrat ki idli are steamed cakes made with fresh veggies. It’s healthy and super delicious.
Sama rice or barnyard millets/mordhan/moraiyo is a gluten- free grain which behaves like rice and is a perfect fasting ingredient. These idlis made with yogurt and fresh veggies are extremely fluffy and light. Pair it up with coconut chutney and they both complement each other perfectly.
Now on to the recipe! Sama rice Idli or vrat ki idli
Soak sama rice for 2-3 hours, drain and grind it to a fine paste along with other ingredients. I have added crushed red chili flakes because I didn’t wanted my idlis to end up red in color .
Also I have added carrots and cabbage to this recipe but feel free to substitute these veggies with chopped spinach*. Just before steaming add eno and steam for 6-7 minutes. You can substitute eno with baking powder.
Some notes about baking powder!
- Baking powder is a composition of 2 parts (teaspoon) of cream of tartar + 1 part (teaspoon) of baking soda .
- Cream of tartar is used to increase the acidity of the batter.
- To activate it I have used citric acid + lemon juice + water .
Other substitute for baking powder will be citric acid + lemon juice + water +curd + 1 teaspoon of cream of tartar + 3-4 hours of fermentation. Results will not be the same as shown above but idlis will turn out to be light and moist.
*DISCLAIMER – If you do not consume a particular veggie or spice during Navratri , feel free to leave that out and follow your family vrat guidelines.
