We all have picky eaters and making them eat their greens and pulses is a struggle. But for some time now, I have managed to avoid mealtime battles. How? A bowl of hot soup is the final answer… toss everything together, boil, mix and mash – without any argument they will lick clean their bowls – tried and tested. 😉
Now that winter has arrived in its full glory, my kitchen will be serving some warm, flavorful, and lip-smacking soups loaded with greens, beans and pulses; once a week. It doesn’t take that long to cook a soup – hardly 30 minutes from start to finish. So, do you have a bag of yellow moong dal in your kitchen, if so, then you have yourself a yummy meal tonight. Remember, a soup doesn’t have to be rich and creamy to satisfy – a simple, warm and comforting soup is enough to tickle your taste buds.
RECIPE DETAIL – Pretty straightforward recipe. Clean and wash dal, transfer it to a pressure cooker along with other spices and cook for 3-4 whistles. For those who are new to pressure cooker – 3-4 whistles means cooking for 10-15 minutes in a closed cooker. Cook and purée the dal, mix in spices, tempering and you are all set. I believe that the longer the soup cooks the better it taste but in this case you will have a full – flavored hearty soup ready in about 30 minutes.
So fill yourself a bowl, grab a blanket and enjoy a bowl of hot soup for dinner with some focaccia bread.
