INGREDIENTS
BOILING QUINOA
  • 1 cup Quinoa
  • 2 cups Water
FOR THE SALAD
  • 1 cup Black Beans
  • 1 cup Whole corn kernels
  • 1/2-1 cup Chopped Green Onions
  • 1 cup Capsicum, cubed
  • 2 tablespoon Chopped Cilantro
  • 1/4-1/2 cup Feta cheese
  • 1/4 cup Finely chopped tomatoes
FOE THE DRESSING
  • 1/4 cup Olive oil
  • 1 tablespoon Honey
  • 2 tablespoon Lemon Juice
  • 1/2 teaspoon Red chili powder
  • 1/2 - 1 teaspoon Paprika
  • 2 tablespoon Yogurt
  • 1 tablespoon Chili Garlic sauce
  • 1 teaspoon Coarsely crushed black peppercorns
  • Salt to taste
CHANGE SERVING SIZE: PEOPLE

METHOD
BOILING QUINOA
  1. Measure Quinoa.
  2. Combine water and quinoa in a pan.
  3. Bring it to a boil.
  4. Cover and let it simmer on low heat for 12- 15 minutes.
  5. Cooked quinoa.
  6. Set it aside to cool.
ASSEMBLING SALAD
  1. Wash and chop veggies.
  2. Assemble corn and bell pepper in a bowl and..
  3. Saute for 1-2 minutes. Remove from heat and set it aside.
  4. Assemble ingredients for the dressing.
  5. Combine all the dressing ingredients (except oil).
  6. Add oil and whisk until well blended. Set it aside.
  7. In a large bowl combine quinoa, cooked corn, bell pepper, black beans, cilantro, spring onions, and feta.
  8. Pour in the dressing..
  9. Toss until well blended. Season to taste.
  10. Serve hot or cold.
