Looking for a last minute easy peasy dessert recipe that can be made-ahead-of -time for your Valentine? Then look no more! Eggless Strawberry Mousse is a perfect no-bake dessert that comes together in 15 minutes (minus the setting time). 

You don’t have to be an experienced cook to make a mousse. With just few ingredients on hand, you can create something exciting and delicious for your Valentine or for your family. And above all, it has no gelatin, is egg-free and gluten-free too.

I have been making this mousse for quite some time and have to share that it’s a keeper. A mousse that is so creamy, light and velvety in texture that it will just melt-in-you-mouth. Experience a real taste that just screams STRAWBERRIES without any added flavor. 🙂

Now, onto the recipe!

Strawberries + whipped cream + agar agar powder/vegetarian gelatin is an amazing combination to any mousse. There are some tips to be taken into consideration – Eggless Strawberry Mousse

  • Unlike gelatin, agar agar needs to be boiled and then simmered for few seconds to activate. 
  • I like my strawberry syrup to be chunky and coarsely grounded. But if you don’t like it chunky, blend longer and create a smooth and silky puree.
  • Work with agar- agar at the last as it tends to set pretty quickly. 
  • No fresh strawberries, no worries – use frozen strawberries or simply use berries of your choice .
  • Store bought whipped cream can be used. If you like to make it at home, then follow this link
  • Color of mousse depends on the color of strawberries. Mine were not too red so the mousse turned out to be lighter in color.
  • This is a mousse and it will melt if exposed to hot temperatures. So if you are planning to make it for Mother’s day or 4th of July then mave provisions to keep it cool or it will turn into a milkshake like consistency. 

Depending on the weather, it may take somewhere between 1-3 hours to set the mousse.

Once set, decorating is super easy and fun! Top it with a swirl of whipped cream, sliced strawberries and shavings of chocolate. Or enjoy as is, it tastes super yum without a topping too.

INGREDIENTS
AGAR AGAR MIXTURE
  • 2.5 teaspoon Agar agar powder or Unflavored veg gelatin
  • 3 tablespoon Cold Water
FOR THE MOUSSE
STRAWBERRY SYRUP - WILL YIELD 1.5 CUPS
  • 2 cups Fresh Strawberries
  • 1/4 cup tablespoon of Granulated Sugar
TO DECORATE - OPTIONAL
  • 4-5 pieces of Fresh Strawberries
  • 1 tablespoon Chocolate Shavings

METHOD
PREPARING THE STRAWBERRY SYRUP
  1. Wash and clean strawberries. Trim the top off. (read notes above)
  2. Combine strawberries and sugar in a saucepan and bring to a boil.
  3. Lower the heat and allow it to simmer for 10 minutes until the syrup thickens. Keep stirring occasionally.
  4. When the strawberries are all mushy and the syrup has thickened, take it off the flame and allow to cool. TIP - Taste, if the syrup taste tarty, then add extra sugar and boil for few more minutes.
  5. When completely cooled, coarsely puree it with a immersion blender. Add essence and set it aside.
  6. Prepare homemade whipped cream or you can use the sore bought one. If using the store bought shipped cream, thaw it for 20 minutes on the counter.
  7. Melt white chocolate in microwave stirring after every 30 seconds. Or you could do over the cooktop. Boil water in a pan, transfer white chocolate to a thick glass bowl and place the bowl over the boiling pan. Make sure the glass bowl is big enough to sit on top of the pan. Whisk and stir until chocolate is fully melted. allow it to cool.
AGAR AGAR PREPARATION
  1. Combine agar- agar in 3 tablespoon water. Whisk and allow it to stand for a minutes. Heat the pan over a medium heat for 15 seconds and whisk agar-agar again. Add 1 teaspoon of cold water and combine it with strawberries.
ASSEMBLING THE MOUSSE
  1. Combine agar-agar-mixture and strawberries together.
  2. Mix again.
  3. Transfer cream to a large bowl.
  4. Separate 1/4 cup of whipped cream in a bowl and add white chocolate to it. Fold in carefully. This is done to prevent any cold shock to the chocolate. Mix until well blended. TIP - If chocolate is added to cold whipped cream, chocolate will become firm and grainy again.
  5. Now add this cream-chocolate blend to the whipped cream bowl and fold gently.
  6. Pour in strawberry-agar agar mixture and gently fold the strawberry mixture into the cream until combined.
  7. Pour into individual cups and ....
  8. Chill for 5-6 hours or overnight.
  9. Or chill until firm.
  10. All set mousse.
  11. Just before serving, garnish with additional whipped cream, if desired.
  12. Decorate with freshly sliced strawberries and some chocolate shavings and serve.

    can one skip the white chocolate and use dark chocolate? and can I also mix cream with greek yogurt?

      Sure you can use dark chocolate. Color will differ. Mousse will become chocolaty in color.
      Haven’t tried with yogurt so can’t comment on the end result.
