Dry and Liquid Kitchen Substitutes

Did you ever find yourself in a situation where you run out of a certain ingredient, right in the middle of preparing a recipe and needed something fast to substitute it? Here is my collection of handy substitute chart which I always keep on hand, just in case.

Broth1 CupUse water in place of stock and season it up a bit more than what the recipe calls for.
Beer1 CupUse Chicken broth OR Ginger Ale OR Apple cider
Cornsyrup1 CupMix 1 cup of sugar and 1/4 cup water
Cream - Heavy1 CupMix 3/4 cup milk + 1/3 cup butter OR
Mix 3/4 cup milk + 1/4 cup shortening/butter OR
2/3 cup evaporated milk.
Cream - Whipped1 CupWhisk together 1/3 cup of softened butter + 3/4 cup of milk
Evaporated milk1 cup1 cup cream, whipping, regular or heavy cream OR 3/4 cup whole milk + 1/4 cup half-and-half
Half-n-Half1 CupMix 4-1/2 teaspoons melted butter + enough Full cream milk to equal 1 cup.
Honey1 Cup1 1/4 cup granulated sugar + 1/4 cup recipe liquid (use the liquid asked for in the recipe) OR
1-1/4 cups sugar + 1/4 cup water of apple juice
Lemon Juice, fresh1 Tablespoon1 tablespoon bottled lemon juice from concentrate, OR white vinegar
Mayonnaise1 Cup1 cup hunged beaten yogurt
Milk1 Cup1/2 cup evaporated milk + 1/2 cup water OR
1/2 cup condensed milk + 1/2 cup water
Orange Juice1 Cup1 Cup any juice that is citrus in nature like pineapple, lemonade, lime juice or grapefruit.
Orange Zest1 Tablespoon1 teaspoon lemon juice or lemon zest ( will change the flavor though) OR orange flavoring
Shortening1 Cup1 Cup Butter
Sesame Oil 1 TeaspoonMix 1/2 teaspoon canola oil + 1 1/2 teaspoons sesame seeds
Sour Cream1 Cup1 Cup Low-fat Plain Yogurt Or 1 cup buttermilk
2 Tbsp. white vinegar + enough milk to make 1 cup, let stand 5 minutes before using OR
1 tbsp. lemon juice and enough evaporated milk to make 1 cup
1 cup plain yogurt OR cottage cheese mixed with yogurt
Vinegar 1 Teaspoon1 teaspoon lemon or lime juice
Tomato Juice1 Cup1/2 cup tomato sauce + 1/2 cup water
Tomato Puree1 CupTomato sauce OR 1/3 cup tomato paste + 1/2 cup water.
Tomato paste1 Tablespoon1/4 cup tomato sauce and eliminate some other liquid from the recipe.
